- EPDM is the right O-ring compound for water and steam paths since it resists heat and mineral scale better than nitrile, if you're rebuilding an older La Marzocco GS/GS2 paddle valve, confirm you're getting EPDM (not a generic hardware-store NBR O-ring) or it will harden and leak within a season.
